At 269 GastroVegan, the kitchen is at the heart of our philosophy. Every dish we serve is carefully crafted with fresh, organic ingredients, selected from local suppliers committed to sustainability and respect for the environment. We do not use frozen or processed products, because we believe that the true essence of flavour lies in the quality of food in its purest state.

Our specialty is stews and spoon dishes, faithful to traditional Spanish recipes, but transformed into vegan versions that retain all the essence of their original flavors. Imagine tender vegan cheeks full of flavor, or a farinato reinvented with 100% vegetable ingredients. These reinterpretations not only respect the gastronomic legacy of our land, but elevate it by aligning it with the values of sustainability and compassion.

In our kitchen, each dish tells a story: that of love for tradition, creativity to innovate and commitment to offering food that nourishes both body and soul. It is home-style cooking, inspired by the meals of yesteryear, brought to the present with an ethical approach that shows that enjoying food and respecting the planet is not only possible, but delicious.

The name “269” has a deep meaning that represents our mission and values. This number comes from an international movement in defense of animal rights, born from the identification of a calf on a dairy farm that symbolized the suffering of millions of exploited animals around the world. Adopting 269 as the name of our restaurant is a way to honor that fight and remember that every choice we make, even when eating, has a real impact on the lives of other beings.

For us, 269 is not just a number, it is a call to action. It is a reminder that food can be a vehicle for change, a bridge between our values and our daily actions. That is why, at 269 GastroVegan, we do not only serve delicious dishes, but we also offer a space to reflect, share and be part of a global movement that seeks a more just and compassionate world.

Our commitment is that every visitor, when enjoying our dishes, feels inspired by the idea that ethical values and gastronomic pleasure can go hand in hand. Here, 269 is more than a symbol, it is a declaration of intentions: to demonstrate that conscious food can be both a delight and a tool to transform the world.
